Dear Ryan,
Campus Compact does a significant amount of work around civic engagement, so I have a number of resources to recommend to you. First, we have a service-learning and civic engagement web site that includes an "advanced" site focused on civic engagement and includes information on measuring, assessment, program models, resources, etc. This site is located at http://www.compact.org/advancedtoolkit/. In addition, you'll find more model programs around civic engagement at http://www.compact.org/resources/ under "Model Programs."
In addition, several recent and forthcoming articles & resources by Campus Compact staff include:

Hollander, Elizabeth and John Saltmarsh (2000). "The Engaged University." Academe: Bulletin of the American Association of University Professors. July August, 86:4, p. 29-31.

I am looking for information that anyone might have or can direct me to
concerning civic engagement, civic responsibility, civic understanding,
etc...
We are looking into the possibility of creating a Center for Civic
Engagement on our campus, under which service learning, community service,
AmeriCorps, our Service Learning Resource Center, and several other
possibilities would fit into. Do any of you have any experience with such a
venture or programs?
I would greatly appreciate any feedback that anyone could provide!
