Teresa,

Take a look a few books on teacher education and service-learning: Service-Learning in Teacher Education, by Jeffrey Anderson, Kevin Swick, and Joost Yff (2001 by AACTE) and Learning With The Community, by Joseph Erickson and Jeffrey Anderson (1997, AAHE ).  You will find lots of models of pre-service, student teaching, and teacher development programs.

Also, contact members of the National Service-Learning Teacher Education Partnership (through people such as Jeffrey Anderson (Seattle University), Joe Erickson (Augsburg College), Penny Callahan (Providence College), Kevin Swick (U of South Carolina), Sue Root (Alma College), Don Hill (Youth Service California)....and a host of others.  They have perhaps the most extensive information about what is happening in teacher education across the US.

You might check with Debby Chessin at the University of Mississippi.  She is involved in a fairly extensive effort to include service-learning in teacher education.

Closer by, in Georgia, try to contact Eliabeth Pate at the U of Georgia.  She has been involved in service-learning and teacher education for many years.

Also check with the National Service-Learning Clearinghouse (servicelearning.org)...they have quite a bit of information on teacher education.

Hope this helps.
