Go to the National Service-Learning Clearinghouse (servicelearning.org) and search the library for "risk management." I found 14 citations. The ones by Chuck Tremper are good..he is an attorney and has studied this stuff for quite a while. Also check Campus Compact (campuscompact..org) and the National Society for Experiential Education (nsee.org). They both have information about liability issues.
Many colleges have different policies. Often, since most students are over 18, they approach it differently than K-12 (Will Morgan's comments). In some cases they require students to purchase third party liability. In others, the institution provides the coverage, which protects them and the student from problems. And of course, the organization can have insurance. Most non-profits and public institutions have coverage for volunteers...so in many cases students are covered if considered volunteers.
