"Days of Service" = Service-Learning?

Service-Learning Practitioners,
I am looking for models of campus-wide "Days of Service" that follow a
truly curricular/academic service-learning philosophy.
For 2 years now, our small campus has had an annual day of service called
"Community Collaborations Day" where classes are cancelled and faculty,
staff and students participate in various projects in the surrounding
communities. We promote this event as our university-wide day of
collective activity symbolizing our on-going partnerships with the community.
I know that many of your campuses also have similar events--usually
associated with orientation or in celebration of civic leaders like MLK Jr.
and Cesar Chavez.
The way it is now, our annual event leans more towards community service
than service-learning since reflection is spotty at best. From what I have
briefly researched, similar events on other campuses usually follow a
co-curricular service-learning model and there may be reflection and
learning integrated, but this learning is based on the concept of "getting
to know" the community or learning about leadership based on the leader
being celebrated.
Is it possible to have a day of collective service/involvement/activity
that has all three elements of MJCSL's academic service learning: enhanced
academic learning, meaningful service with the community and purposeful
civic learning??
Does anyone have a model for engaging several courses in academic
service-learning with a single community involvement event in mind?
Any ideas, thoughts, resources would be much appreciated!
