Political Theory and Service-Learning

I'm currently discussing how to incorporate service-learning into a 
Political Theory course that will be taught in spring 2003.  The class will 
have between five and ten students and will cover a period from Plato's 
time through the mid-1800's, so contemporary political philosophers won't 
be covered.  Our institution, Morningside College, is located in Sioux 
City, Iowa, a town of about 130,000 people with a large Hispanic 
population, therefore, we have a variety of not-for-profit and city 
government agencies that we can contact.  If anyone has any 
recommendations, please contact me.
