Here is a description from the site: "The following organizations specialize in 
connecting college-age individuals with substantive volunteer and service 
opportunities during school breaks, spring and other."

It lists several interesting programs.

Also, you may want to go to a search engine (I used www.google.com) and plug in 
the search terms "Alternative Spring Break" and service-learning--I found many 
websites describing some interesting projects. Most of them were specific to 
one college's service-learning program but you might get some good ideas there. 
I didn't include them here because they were focused on one school's 
activities, but maybe it will be helpful for you.
